Recipe of mustard turkey breast with its garnish
Ingredients (4 people):
- 1 turkey breast of 1 Kg.
- 1/2 cabbage
- 2 cloves of garlic
- 2 tomatoes
- 175 gr. brown sugar
- 1 glass of water
- balsamic vinegar
- extra virgin olive oil
- 2 rosemary branches
- 2 tablespoons old-fashioned mustard
- 100 gr. fat salt
- parsley (to decorate)
Preparation of the recipe of mustard turkey breast with its garnish:
Enter the rosemary branches in the breast of turkey (one at each end, you can help yourself with a knife to break through) Spread the turkey with a generous spoonful of mustard on both sides and spread well. Mix the salt and sugar, and place half in a bowl. Put the breast on top and add the rest of the sugar and salt mixture on the turkey. Let macerate for at least 2 hours. After this time, wash the breast with water, dry it well and brown it in a pan with a splash of oil. Reservation.
Place the breast in a bowl of oven, brush it with the other tablespoon of mustard, pour a drop of oil on top and bake for 20 minutes at 200º C (with the preheated oven). When 10 minutes pass, pour a glass of water. Once baked, let stand for 3-4 minutes, cut into steaks and reserve.
Peel and chop the garlic in slices and the cabbage in julienne. Brown the garlic in a pan with a drizzle of oil, add the cabbage, cover the pan and saute over low heat. Season
Peel the tomatoes, cut them into wedges and dress them with olive oil, salt and vinegar from Modena. Serve the turkey fillets, pour the juice from the baking tray, accompany with the cabbage and with some wedges of tomato seasoned. Garnish with parsley.
Turkey meat is a perishable food, so it must be kept in the refrigerator until it is consumed. In this way, it remains in optimal condition for 2-3 days.
