Lemon anchovies with green salad recipe

Ingredients (4 people):

  • 32 anchovies (anchovies)
  • 1 lettuce
  • 1 scallion
  • 4 cloves of garlic
  • 2 lemons
  • flour
  • extra virgin olive oil
  • Sherry vinager
  • Salt

Preparation of the recipe for lemon anchovies with green salad:

Clean the lettuce, chop, drain and place in a bowl. Chop the scallion in fine julienne and add it to the bowl. At the time of serving, season it with oil, vinegar and salt.

Clean the anchovies, removing their heads and guts. Open them in half and remove the central spine trying not to break. Season Sprinkle with the juice of the lemons and add a minced garlic. Let macerate 10 minutes. Remove the lemon juice, let them drain well and if necessary dry them.

Pass them on the flour plate and pat them to remove excess flour. Crush the other 3 cloves of garlic and add them to a pan with oil. When it's hot, fry the anchovies on the 2 sides over low heat pulling in the middle. Drain them on a plate lined with paper towels.

Serve the lemon anchovies with the salad.

Advice:

If you want them to stay thinner, once clean and open, remove the spines protruding from the belly with scissors.
