Thistle recipe with bagna cauda

Ingredients of thistle recipe with bagna cauda:

  • Ingredients (4-6p):
  • - 2 Kg. Of thistle
  • - 200 gr. pumpkin
  • - 1-2 potatoes
  • - 1 onion
  • - Water
  • - olive oil
  • - Salt
  • parsley
  • For the bagna cauda:
  • - 8 anchovy fillets in oil
  • - 3 garlic cloves
  • - 4 butter nuts
  • - olive oil

Preparation of thistle recipe with bagna cauda:

To make the pumpkin cream, peel and chop the potatoes and squash and put everything in a pan with a jet of oil. Add the chopped onion and cook for a few minutes. Cover with water, season and cook for 15 minutes. Crush and reserve.

Clean and chop the thistle and cook it in a pot with plenty of water. Cover and cook (at 1) for 4 minutes after the steam starts to come out. Drain and reserve.

To make the sauce, put the butter in a pan with a drizzle of oil, add the garlic cloves and chopped anchovies and cook until the anchovies are broken. Serve the pumpkin cream on the bottom of a plate, place the thistle on top, sauté and decorate with parsley.
