Recipe for noodles with crayfish and quail eggs

Ingredients of the recipe for noodles with crayfish and quail eggs:

  • - For 2 persons:
  • 200 g of noodles
  • 8 tails of crayfish
  • 4 quail eggs
  • 1 tomato
  • 2 cloves of garlic
  • barley flour
  • 100 ml of soy milk
  • 1 cup sesame oil
  • olive oil
  • Salt
  • 5 g cinnamon powder
  • 10 mint leaves
  • chopped mint

Preparation of the recipe for noodles with crayfish and quail eggs:

To make the sauce, cut the tomato into small pieces and roll it in a pan with a little oil. Add a pinch of cinnamon, chopped mint, pour the soy milk and season.

Stretch plastic paper on the countertop, put a splash of oil on top and shell two quail eggs on top, wrap, close with a lid and repeat the operation with the other two eggs. Boil plenty of water to boil in a casserole. Introduce the eggs and let them poach for 2 minutes.

Pass the mint leaves through the flour and fry them in a pan with sesame oil. Drain on absorbent paper and reserve.

Laminate the garlic and brown them in a pan with a splash of oil. Clean, peel and season the crayfish. Sauté them in a pan with a splash of oil.

Put plenty of water in a casserole and a pinch of salt and cook the noodles for 4 minutes. Drain and reserve. To place, introduce the pasta in 2 square molds, place the poached eggs on top. Sauce, unmold and accompany with crayfish and mint leaves.
