Stuffed Potato Cake Recipe

Ingredients

  • - For 2 persons:
  • 2 potatoes
  • 8 mushrooms
  • 1 slice of serrano ham 20 g
  • 1 onion
  • 2 cloves of garlic
  • 1 slice of serrano ham 20 g
  • 3 eggs
  • 6 slices of cheese for gratin
  • 1 handful of watercress
  • 1/2 lemon juice
  • olive oil
  • Salt
  • chopped parsley

Preparation of the stuffed potato cake recipe:

Chop the onion and garlic cloves and put them in a pan with a drizzle of oil over low heat. When they are fried, add the chopped mushrooms. Season

To make the potato cakes, cut the potatoes into thin slices with a mandolin. Arrange in a pan smeared with oil as if they were the petals of a flower. Season and turn them over. Repeat the operation until you make four cakes.

To make the ham tortillas, cut the slice of diced ham and fry them lightly in a pan with a drizzle of oil. Shell the eggs in a bowl and beat them. Add to the eggs, the diced fried serrano ham and season. Add the mixture to the pan and make two tortillas the size of potato cakes.

To place, put a potato cake on the plate, place a little of the sauteed mushrooms on top and cover with a ham tortilla. Add another potato cake and cover with three slices of cheese. Repeat the operation on another plate and gratin in the oven (previously hot) at 220º C for 2 minutes.

Serve the stuffed potato cake with the watercress salad seasoned with lemon juice, a pinch of chopped parsley, three tablespoons of oil and salt.
