Vegetable Pudding Recipe
- -For six people:
- 4 eggs
- 7 carrots
- 250 gr. broccoli
- 1 zucchini
- a nut of butter
- bread crumbs
- chopped parsley
Preparation of the vegetable Pudding recipe:
Peel the carrots, separate the broccoli corsages and cut the zucchini sliced along. Put three casseroles with water and a pinch of salt and cook the vegetables separately. Drain on paper towels.
Put the eggs in a jar, chop 5 cooked carrots and mash with the electric mixer until you get a homogeneous puree.
Put a strip of baking paper on the mold, brush it with a little butter and sprinkle it with breadcrumbs.
Place a layer of mash on the mold, cut the other 2 carrots into strips, place them on the mold, pour another little puree, put the broccoli sprigs, another little puree, cover with the slices of zucchini and pour the rest of the puree. Enter in the oven to a water bath at 160 for 45 minutes Let temper and unmold. Accompany with a little mayonnaise and sprinkle with a little chopped parsley.
